Shrimp is roughly divided into several categories. Generally speaking, shrimp is divided into two categories: seawater shrimp and freshwater shrimp. Common sea shrimp: Chinese shrimp, big head, female blue blue, male yellow brown, thin shrimp shell; Japanese shrimp, pale yellow, with blue-brown horizontal stripes, thicker shell; new shrimp, The surface is light brown, covered with dense light brown dots, and the shrimp shell is thin and soft. Common freshwater shrimp: Roche shrimp, body fat, thick head and chest, the abdomen gradually becomes thinner afterwards, the tail appendage changes to a tail fan, the surface is blue-brown; grass shrimp, the shrimp body is dark green, dark brown and light yellow The horizontal spots are arranged to form a bright marking on the abdomen; the green shrimp has a clear boundary between the head and the head, and the head and chest are thick, gradually thinning from the abdomen, and the body color is blue-blue with intertwined brown-green markings; Like Chinese shrimp, the body is larger, the body color is light blue and gray, and the carapace is thin.

Which is better for seawater shrimp and freshwater shrimp? In fact, the nutritional value of seawater shrimp and freshwater shrimp is not much different. If you are looking for a delicious taste, it is recommended to choose sea shrimp, but the price is more expensive.

What kind of shrimp is the freshest? If it is a live shrimp, you can observe the flexibility of swimming, the more flexible and fresh. If it is chilled shrimp, the more lustrous the body surface, the tighter the head and chest, and the tighter the shrimp, indicating the higher the freshness. Non-fresh shrimp, loose fleshy, hand-held shrimp body, will feel the looseness of the shrimp head when shaking. â–²

Safe shrimp head is best to eat cautiously

Can the shrimp head be eaten? The head of the shrimp is the head and chest of the shrimp, and most of the organs of the shrimp are concentrated. Among them, the stomach and the sputum are dirty, and it is best not to eat. The stomach of the shrimp is in the middle of the head and chest, and the shrimps are on the sides of the head and chest and at the base of the foot. Shrimp and shrimp paste can be eaten, but it should be reminded that their cholesterol levels are high and people with high blood cholesterol should be cautious.

The shrimp head turns black because the heavy metal exceeds the standard? The shrimp head contains tyrosinase. Under its action, tyrosine can gradually form anthraquinones, and then form black matter such as melanin and brown melanin. In other words, the blackening of the shrimp head is mainly the role of enzymes, and has little to do with heavy metals. Even under chilled or refrigerated conditions, tyrosinase is still active, so blackening still occurs. The shrimp head is also the viscera of the shrimp. If the shrimp eats a lot of dark algae, such as brown algae, before fishing, it may also be black.

Must the shrimp line be removed? The shrimp line is the digestive tract of the shrimp. As long as the shrimp is cooked, there is no need to worry about safety. Our common shrimp line is black, indicating that the intestine contains undigested food debris. The larger shrimp may have sediment inside. If it is psychologically unacceptable or worried about the taste, it can be removed. â–²

How to quickly go to the shrimp line? Starting from the head line of the shrimp, go back to the third section along the back, bend the shrimp body, insert a toothpick across the exposed lighter position, the position is lower than the shrimp line, then Gently lift up and the shrimp line is picked out. This method has less damage to the integrity of the shrimp body; or use a knife to cut the shrimp body along the midline of the shrimp back, and then use the tip of the knife to pick out the black shrimp line.

How to quickly peel the shrimp? First peel the shrimp head, then count up from the end of the body to find the position between the third and fourth sections; squeeze the shrimp body with both hands and bend it several times at this position; Then grab the shrimp with one hand, the other hand holding the shrimp tail, gently pull the shell away; finally peel off the remaining shrimp shell.

How to make shrimp best? Shrimp itself tastes very delicious, so the cooking method should be less salt and less oil, as much as possible to maintain the original flavor, such as boiled and steamed, with light dip; larger shrimp because of thick meat, The inside may be lighter, and you can do some simple seasonings, such as adding a little soy sauce to make the braised prawns. If the smell is heavier, you can add some yellow wine and onion ginger to the cockroach. High-temperature frying, on the one hand, leads to the loss of some antioxidant components, on the other hand, the protein is severely denatured, and the meat is hardened, thereby affecting digestion and absorption. â–²

Can you eat with fruits? The saying that "shrimp and vitamin C-rich fruits are eaten together will cause arsenic to poison people" has been circulating in the private sector. In fact, the amount of shrimp and fruit that is normally eaten is not enough to produce a poisoned or lethal dose of arsenic trioxide, or arsenic. From a nutritional point of view, these two foods are complementary and can be eaten together.

Can you eat when there is a wound? Some people say that shrimp is a hair, and it does not heal well after eating. In fact, as long as the shrimp is not allergic, you don't have to worry, and the shrimp is a high-protein, low-fat food that helps the wound heal, so people with wounds should actually eat more.

Can pregnant women and patients with hyperuricemia eat shrimp? If the shrimp is not allergic, pregnant women can eat shrimp. Shrimp is rich in nutrients, especially rich in protein, which is very suitable for pregnant women. However, patients with hyperuricemia should preferably reduce the intake of shrimp because of its high sputum content, which may aggravate the symptoms.
