On the eve of the college entrance examination, with the staff of the Market Supervision Bureau of Jiaxing City, the author conducted food safety inspections in the canteens of the Jiaxing No. 1 Middle School and High School Campus.

From the storage of raw and cooked food ingredients to the ratification measures in the material storage room, the supervisors did not miss every detail.

“From the current inspection situation, the overall situation is still good. The canteen warehouse strictly adheres to the principle of “Left into the Right” in order to ensure that new ingredients are used in the future and avoid misuse of expired foods. In the use of the canteens, the person in charge said that they sterilized each meal, and the kitchen hall, in accordance with the "clearing after use" rule, required the use of tableware, condiments, etc. after use to return home in time to ensure the hygiene and cleanliness of the kitchen. Some details of the problem still exist, such as food insulation, food cleaning, etc., mainly due to non-standard operations. We will immediately supervise the canteens to carry out rectification, and the pre-examination work will be completed in the past few days.” According to Chen Chenghong, Director of the Catering Division of the Bureau of Supervision, “In the period of college entrance examination, the local supervision department will dispatch special supervision and protection personnel to the canteens of various test sites to conduct inspections, including on-site supervision and guidance of raw material procurement, operation and processing procedures, etc. Supervise schools to implement rectification."

This year, there are 37 examination rooms set up in the Jiaxing High School Campus. Each student has 30 students in each examination room, which means that the canteens are responsible for more than 1,000 teachers and students. Before the exam, the person in charge of the fourth senior school canteen also stated that he would do his best to ensure the safety of the teachers and students. During the work period, the canteen staff classifies each ingredient and effectively prevents the growth of bacteria. However, supervisors still found some embarrassment. “After 10 am, a lot of dishes have been cooked and the students are after 11 o’clock at noon. It may take up to 12 o’clock to eat at night. In addition, facilities and equipment must also be used for thermal insulation. In the early stage, it specifically held meetings to convey the spirit of the higher level meetings. The requirements for the canteens are to do a good job at the source of health and safety work, including checking the staff's health certificate, meat quarantine certificate, requesting proof of ingredients and so on.
